Wholesomely Cozy: Chai-Spiced Cookies

I love, love the idea of cookies! They’re such an emobidement of childhood— a small, fragrant circle can convey so much love and care. Walking in to the wafting aromas of cookies in the oven instantly says home, doesn’t it? But all grown-up, I am very conscious of home being wholesome—and good news, cookies can be, too.
Using a base of finely ground oats and rich, nutty tahini, these simple—and simply delightful—cookies draw their authentic chai spiciness directly from your favorite Chai tea bags (I love Organic India’s Tulsi Masala Chai). Just snip two bags open and pour the contents directly into the oat flour, delivering a blissful blend of Cinnamon, Ginger, Cardamom, Pepper, Nutmeg, Clove, and energizing black tea. With Organic India’s teas, you get the aded enhancement of potent adaptogen Tulsi (Holy Basil), lending extra stress support to the aromatic invitation to pause and enjoy.
Incorporating psyllium
Sweetened with low-glycemic coconut sugar, these morsels are similar to classic molasses cookies, but made healthier. In this recipe, Organic India’s Psyllium Pre & Probiotic Fiber aids in binding, lending a little bit of chewiness to the texture. You can opt for Whole Husk Fiber in place of the powder, however. In this recipe, a 1-1 swap works just fine, although if you wanted, you can add a tad more Whole Husk with no problem.
Beyond its role as a binder, Psyllium powder offers notable health benefits, helping to promote digestion and aid in maintaining a healthy gut microbiome. Tahini Chai-Spiced Cookies
With warm, fragrant spices and just the right level of sweetness, these vegan, gluten-free treats deliver all the comfort from a cozy cup of chai in cookie form!
Ingredients
- 1 Cup oat flour
- 2 Chai tea bags (about 2 Tablespoons spice blend)
- 1 Teaspoon Ceylon Cinnamon
- ½ Teaspoon baking powder
- ½ Cup tahini
- ½ Cup organic cane sugar or coconut sugar
- 1/2 Tablespoon vanilla
- 1 Teaspoon ORGANIC INDIA Psyllium Pre & Probiotic Fiber (you can also use Whole Husk Psyllium)
- ⅓ Cup unsweetened vanilla plant milk
- Powdered sugar to sift on baked cookies, or powdered sugar glaze, optional
Instructions
- Preheat the oven to 375F and line a baking sheet with parchment paper.
- In a mixing bowl, place the oat flour, contents of the tea bags, Ceylon Cinnamon, and baking powder and whisk to combine.
- Add the tahini, coconut sugar, and vanilla to the bowl.
- Stir the Psyllium Pre & Probiotic Fiber into the measured plant milk and add to the bowl.
- Stir all ingredients together to form a dough. Scoop approximately one heaped Tablespoon of dough per cookie onto the prepared baking sheet, lightly pressing down with the back of the spoon.
- Bake for 12 minutes, or until cookies are becoming firm. Remove from the oven and let cool before adding powdered sugar or glaze if desired. Enjoy!
