Spice rack staple Cinnamon may be widely used enough to be ubiquitous, but commonplace it is not. Sometimes anticipatory grief hits over something so small and unexpected. This week, it was over receiving F’s last issue of Lego Life Magazine. We know it’s the last issue, because there’s a note printed on it saying so. Because, now he’s 11. Because it’s designed for younger kids. We have the option to renew one final year, but we won’t. We appreciate the truth—it is designed for younger kids. We still enjoy thumbing through the pages, but it takes all of one minute, and we’d rather save the trees.

Sometimes it’s easy to wallow, and then, just as unexpectedly, something equally small but comes along that feels like the coziest hug. This week, running has felt, while not fast the way I wish it did, extra strong. And yesterday, I bought two mini pumpkins from Sprouts, popped them on the mantle and forgot about them. As soon as F walked through the door after school that day, he exclaimed, “Oh! You bought pumpkins! You can already get pumpkins?” He’s always loved pumpkins, and decorating.

Sure, the reaction wasn’t the toddler’s bright-eyed squeal that pumpkins once evoked. But there was real delight, an authentic warm joy. It felt wonderful. It made me think, or actually feel, ah, we still love apples and pumpkins. We can still play Lego. Forever even, maybe.

Cinnamon Apple Pear Tart

Ingredients

For the crust
  • 1 ½ cups flour (whole wheat, spelt, white whole wheat, all purpose)
  • ½ teaspoon baking powder
  • ½ Cup unsweetened plant milk
  • ½ Cup avocado oil
For the filling
  • 3 pears (Bartlett), peeled cored and thinly sliced
  • 3 apples, peeled, cored, and thinly sliced
  • 1 Tablespoon ORGANIC INDIA Ceylon Cinnamon
  • 3 Tablespoons coconut sugar
  • 1 Tablespoon ORGANIC INDIA Cinnamon Spice Pre & Probiotic Fiber, optional
  • ¼ Cup fruit-only apricot or other light-colored jam OR use apple jelly or maple syrup, for brushing over fruit near the end of baking

Instructions

  1. Prepare the crust: Whisk together flour and baking powder in a mixing bowl. In a measuring cup, combine plant milk and oil. Slowly stir the milk mixture into the flour until forming a workable dough.
  2. Press the crust into a prepared tart pan (9 or 10 inches), pulling up the sides. Prick lightly with a fork and set aside.
  3. Place sliced apples and pears in a mixing bowl and add the ORGANIC INDIA Ceylon Cinnamon, coconut sugar, and Cinnamon Spice Psyllium Pre & Probiotic Fiber, if using. Gently stir to coat. Don’t worry if some of the slices break.
  4. Preheat the oven to 400 F. Working from the outside edges in, arrange the fruit slices closely in a circular pattern to cover the whole crust. The fruit will shrink when baking, so slight overlapping of slices is advised. Allow some of the fruit to heap up in the center, and feel free to fill in areas with any smaller slices or broken bits.
  5. Bake the tart for approzimately 40 minutes. Pull from the oven and use a pastry brush to coat the top with the preserves. Return to the warm oven for approximately 5 more minutes. Enjoy warm, room temperature, or chilled, as is or topped with a dollop of ice cream, coconut cream, or yogurt.
