Golden Milk Cutout Cookies
Christmastime, and ‘C’ is for cookie! And Christmas, obviously, but come on. Cookies are a must, right? Spread some holiday cheer with golden benefits this season. Holiday treats don’t need to be teeming with sugar to make the most of spice. Lightly sweetened with pure maple syrup, these easy-to-make vegan and gluten-free cookies have a crisp yet meltaway shortbread-like texture and warm, earthy flavor. Turmeric pairs beautifully with ginger and vanilla, lending taste, color, and a punch of wellness benefits, too.
Also known as “The Golden Root”, Turmeric is one of the most studied spices on the planet. Lauded for its powerful antioxidant properties, Turmeric is associated with healthy inflammatory response, support for healthy joints and mobility, and more. I like to use Organic India’s Turmeric Formula, which combines whole root Turmeric with curcumin and a masterful blend of peppers, but any ground turmeric will work well in these.
This year, these are my very favorite cookies to bake and share. I know they’re not to everyone’s taste. Also, I agree that some occasions just call for all the sugar and fairytale sprinkles. But these quick, simple cookies are have a delightfully rustic, almost savory taste that somehow offers a kind of cheerful stillness. They’re lovely and crisp just as they are, but I like to add just a touch of more classic sugar sweetness on top, especially for the holidays. A light, lemony glaze adds a delectable, complementary contrast. Enhance the overall flavor and texture even more with a sprinkling of unsweetened coconut shreds. Golden Milk Cutout Cookies
Ingredients
- 1 Cup almond flour
- ⅓ Oat or any gluten-free flour (more as needed for rolling)
- ¾ Teaspoon ORGANIC INDIA Turmeric Formula
- ½ Teaspoon ground ginger
- 1/4 tsp baking powder
- 3 Tablespoons pure maple syrup
- ¼ Cup avocado or olive oil (or of choice)
- 1 tsp pure vanilla extract
- Icing or glaze, shredded coconut, optional for decorating (see note)
Instructions
- Preheat the oven to 325 F.
- In a mixing bowl, whisk together the dry ingredients (almond flour through baking powder).
- In a liquid measuring cup, use a fork to lightly mix the maple syrup, oil, and vanilla. Pour the wet ingredients into the dry, stirring to form a pliable dough.
- Roll out the dough into a thin layer (about ¼-inch or thinner) on a lightly floured surface, sprinkling flour to the dough surface as needed to prevent stickiness.
- Cut into shapes and place on a baking tray lined with parchment paper.
- Bake for 10 minutes. Let cool before removing from the baking sheet and decorating.
Notes
*For a simple lemon glaze, use a fork or whisk to combine ½ Cup powdered sugar and 1 -2 tablespoons fresh lemon juice.
