Ingredients

  • 1 cup Medjool dates, soaked
  • ¼ Cup pumpkin puree
  • ½ Teaspoon turmeric
  • ¼ Cup almond butter (nuts only)
  • 1 Tablespoon chia seeds
  • 2 Tablespoons pumpkin seeds
  • 1 cup oats
  • ½ T pumpkin pie spice
  • ¼ Teaspoon maple extract
  • ½ Teaspoon vanilla
  • Optional addends: chocolate mini chips, chopped pecans, dried cranberries

Instructions

  1. Pulse all ingredients (except chocolate chips) in a food processor until well-mixed.
  2. Add chocolate chips/addends and pulse a few more times until they are in small pieces.
  3. Scoop mixture and roll into balls. Freeze until solid and store in the freezer or refrigerator.

Ingredients

  • ½ Cup Medjool dates, pitted (about 5)
  • ¼ Cup orange juice
  • ½ Cup almond butter
  • 1 Cup organic gluten-free oats (whole or quick cook are fine)
  • 5 Tablespoons ORGANIC INDIA Orange Psyllium Pre & Probiotic Fiber
  • 2 Tablespoons orange zest
  • ¼ Cup unsweetened shredded coconut, plus extra for rolling
  • Pinch sea salt
  • Additional addends of choice, such as dark chocolate mini chips, chia seeds, orange zest, currants or golden raisins

Instructions

  1. In a food processor, process the dates, orange juice, and almond butter to form a smooth paste. Transfer to a bowl.
  2. Add the oats, Psyllium husk fiber or ORGANIC INDIA Orange Psyllium pre & Probiotic Fiber, coconut, sea salt, and any addends desired.
  3. Form into small balls. Leave as is or roll in additional shredded coconut and store in the fridge. Enjoy!
