Easy Sweet Potato Breakfast Bowl
I’ll keep this post sweet and simple, much like this nourishing breakfast (or lunch, if like me traditional breakfast fare is always best midday). First of all, how adorable is that little onlooker in the mug? My sister gifted me with this fun find, and while it’s not exactly the most practical, panda cuteness never fails to make me smile…so in a way, it actually is very utilitarian after all.
Second, don’t you love the overall trend of “bowl” meals? Any kind of bowl: Nourish, Buddha, Burrito…and now, sweet potato. I'm not sure where I am when it comes to getting on board this train--late, or maybe smack in the middle, but I'm loving these so much I’m convinced I’ve been experiencing a boost in vision sharpness since building them into the week.
You really don’t need a recipe for these, though I’m putting in a quick one below as a guide. They’re best created free-form, though— just blend up a baked sweet potato with a little plant milk (I like using unsweetened vanilla) and some warming spices like cinnamon and a pinch each of ginger and nutmeg, Lately I've swirled in a little cashew cream, too. Top however you like--this one is sliced banana, a sprinkle of homemade granola, and some hemp seeds. You can practically feel the delicious, bright burst of betacarotene, alongside a wealth of antioxidants and other nutrients helping to promote a healthy gut, vision, immune function, and more. Sweet Potato Breakfast Bowl
1 serving
1 medium sweet potato, baked (if you can take it to that point where you start to get a little pool of caramel underneath—perfection!)
1/4 Cup unsweetened plant milk of choice (I like vanilla flavored)
1/2 Teaspoon ground cinnamon
1/4 Teaspoon ground ginger
Pinch ground nutmeg
Toppings of choice
Blend sweet potato, plant milk and spices until creamy, top as desired, and enjoy!
