Nourishing Key Lime Pie Smoothie
Light, tangy, and refreshing, this nourishing smoothie is bursting with tropical flavor and wholesomeness!
We’ve hit the bridge between seasons: mornings unfold more slowly, evenings settle sooner. Bounties of plump tomatoes continue to ripen on their vines as stubby zucchini seem to morph from baby-sized to monstrous overnight under the shadowy canopy of their sprawling leaves. Heat balloons through the height of the day, framed by a leafiness making way from green to gold. Our taste buds turn, too, making the most of juicy summer while edging ever so slightly toward cozier fare. This is the time for a scrumptious summer berry crisp or crumble to really shine. And yet, there’s room still for pure, tropical summer.
This beautiful green getaway in a glass is a key lime dessert decadence without the pie. Easy-to-make and power-packed, I’ve been making it on repeat lately. Sometimes I include frozen cauliflower florets, sometimes avocado. Sometimes Earth Chimp Vanilla protein powder makes its way in there, dreamily shifting the taste from smoothie to milk shake. Smoothies are so welcoming, the challenge of finding out just how much plant power can be packed in one serving is too alluring to resist. With this flavor, so much fits! But the main ingredients you need are lime zest and juice (don’t skimp), plant milk OR a plant milk-coconut water blend, frozen banana, and spinach leaves.
While I’ve listed several ingredients in this recipe as optional, I always aim to maximize the produce packed inside. I don’t always take the time to decorate the glass rim with crushed graham crackers or up the indulgence with coconut whip, but when I do—luxury. It’s a mini staycation moment.
Life has been busy lately, as can be evidenced in the faltering frequency and subjects of posts here, e.g. two smoothies in a row. After a strange stretch of smoothie-lessness, I’m back on the quick blender nourishment train for a lunchtime lift. We’ve just officially embarked on an exciting new homeschool hybrid routine, on our son’s thoughtfully, thoroughly organized request. So far, I’d say we’re off to a great start, hugely thanks to the hybrid component. Homeschooling is hard! A LOT of work! So far, it’s more time-consuming than I anticipated and yet exactly as time-consuming as I think deep down my former teacher self knew it would be. Despite the busyness of trying to set new routines, cover all bases, and keep up with freelancing alongside, I can honestly say there’s a certain sense of deep relaxation. We’re honoring our son’s goals, social and learning styles, and reflectively crafted proposal, and that feels right. So maybe I’ll be posting little but smoothies for awhile. We will still be nourished.
Make this your quick-fix lunch, citrusy breakfast, or delectable dessert. Dress up with coconut whip and a sprinkling of coconut shreds, or not. Whatever you choose, I hope it’s the blend of energizer and blissful break it’s been for me. xo
Vegan Key Lime Pie Smoothie

Light, tangy, and refreshing, this nourishing smoothie is bursting with tropical flavor and wholesomeness!
Ingredients
- 1 banana, sliced and frozen
- Zest of 1 small lime
- 2 Tablespoons fresh lime juice from 1 lime
- ½ Cup unsweetened vanilla plant milk
- ½ Cup coconut water (or use a cup of plant milk)
- About 2 Tablespoons fresh avocado meat, optional
- A good handful (about ⅓ Cup) fresh spinach leaves
- A few ice cubes, optional
- To serve: extra lime wedge and graham cracker crumbs for glass, coconut whip, unsweetened coconut shreds
Instructions
- Prep your glass by wetting the rim with the lime wedge, then dipping in the graham cracker crumbs to coat.
- Add all smoothie ingredients to a high-speed blender and blend until smooth.
- Pour into the prepared glass and top with a dollop of coconut whip and shredded coconut. Enjoy!
