Pink Floral Mousse

I don’t know about you, but mid-July, it’s like a switch has been flipped, and we’re feeling bombarded with Back-to-School messaging. Of course, it’s great to be prepared, but the suddenness of the marketing feels not OK! We still have some bright flecks of summer left, and I want to catch every one, if just to bask in the feeling of easygoing days.
This pinkalicious vegan mousse blends silken tofu and a splash of coconut milk to offer smooth, protein-rich creaminess. Whipped up with a simple syrup that incorporates your favorite floral teas (I love Organic India’s Sweet Rose and Hibiscus Tea Infusions ) alongside fresh raspberries, strawberries, or a berry blend—you can even toss some pitted cherries in there--the light, mousse-like texture is sublime.

Savoring Summer
Back-to-school always seems to hit too soon, and this summer the shift is especially momentous. Chef F—sweet little monkey who tossed and stirred the vegetables in the slow cooker from before he was even 1—is ascending to middle school. He’s so very nervous, and so am I. I know he’ll be great. He’ll stay true to his authentic, focused, introspective, compassionate, talented self, and he’ll transform. What I don’t know is, how will I handle the next big leap in being left behind?
We’ll figure it out, as we always do. Because, what choice is there? He deserves to be celebrated for where he is right now, as the now evolves, as do we all. Right now, I’m going to choose to let worry simmer if it must without too much attention. I’m going to to inhale the shared moments exactly as they are, and to revel in the uplifting, soft color, fragrance, and simplicity of this easy mousse. Enjoy!

PinkFloral Mousse
Lush summer berries with delicate floral notes--this light and simple dessert is the perfect sweet ending to a summer evening.
Ingredients
- 2 tea bags with floral flavor (I love ORGANIC INDIA Hibiscus and Sweet Rose teas, one of each)
- ½ Cup boiled water
- ½ Cup monkfruit sugar or other sweetener of choice for a simple syrup
- 16 ounces silken tofu
- ½ Cup full fat coconut milk (firm top part only, or mixed liquid) or coconut cream
- 1 Cup fresh raspberries, strawberries, or a mix, plus additional for serving
Instructions
- Make a simple syrup: Add tea bags to ½ Cup boiled water in a small saucepan and let steep for several minutes. Give each tea bag a squeeze and remove. Bring tea back to a low boil. Stir in monkfruit sugar, or sugar of choice, until dissolved. Remove from heat and let cool.
- Transfer syrup to a high speed blender or food processor. Add tofu, coconut milk, and berries and blend for several minutes until achieving a smooth, mousse-like texture. Chill at least one hour before serving. Garnish with fresh berries and mint sprigs, if desired. Enjoy!
