Sparkling Lavender Lemonade

Let’s raise a glass to summer! This Sparkling Lavender Lemonade elevates summer’s signature lemony sipper with a delicate floral twist plus a light bubbly boost . It’s so easy to make and oh so refreshing. Adding sparkling water when serving really feels like something special and sets the mood for relaxed, casual elegance—something I truly relish for a change, being generally all casual and zero elegance myself.

A staple for backyard gatherings, poolsides, and neighborhood stands, lemonade is a classic harbinger of summer. Who doesn’t have nostalgic memories of childhood entrepreneurialism of homemade lemonade stands, or at least the idea of them? Lemonade is sweetly iconic…if typically tooo sweet. While store-bought and even homemade lemon beverages are often loaded with sugar, cutting back yields even more uplifting and hydrating results: sweet-tart tanginess complemented by the gentle essence of lavender. Instead of the usual 1-1 ratio of sugar to water in making a simple syrup, this recipe calls for three-quarters of a cup of either monkfruit or organic cane sugar mixed with lavender buds into two cups of boiled water–depending on your taste, you could cut back, further too, down to one-half a cup of sugar or less!

Once you’ve mixed fresh lemon juice with the simple syrup, top up with cold water and stir well. You can pour the concentrated concoction into serving glasses with or without ice, then top with sparkling water for a final flourish; or, stir seltzer straight into your pitchen just before serving. Garnish with lavender sprigs and lemon slices for a little festive flourish!

Variations

Lavender Lemonade with Shatavari (still): Not a fan of carbonation? Simply replace the soda water with more cold water and enjoy!

Elevate summer’s signature lemony sipper with a delicate floral twist plus a light bubbly boost! This sparkling lavender lemonade is lower in sugar than typical, pure in flavor and oh so refreshing.

Ingredients

  • ¾ Cup monkfruit sugar or organic cane sugar
  • 1 ½ Tablespoons lavender buds
  • 2 Cups boiled water
  • 2 Teaspoons ORGANIC INDIA Shatavari (optional)
  • 1 Cup+ freshly squeezed lemon juice
  • 1 Cup cold water
  • 2 Cups (1 750 ml bottle) sparkling or soda water (more as needed)
  • Lavender sprigs and lemon wedges for garnish, optional

Instructions

  1. Make the lavender simple syrup: Pour 2 cups of boiling water over the lavender sugar and stir with a spoon until the sugar has melted. Cover and let infuse for 30 minutes (or up to several hours). Strain and stir in the ORGANIC INDIA Shatavari, if using. (Note, you can also add the Shatavari with the sugar.)
  2. Stir in the lemon juice and add 2 cups of cold water. Taste and adjust for sweetness and tartness, adding additional lemon juice or sweetener as desired.
  3. Pour the concentrated lemonade into individual glasses, topping each up with sparkling water, or stir sparkling water into a serving pitcher just prior to serving.
