Brain-Boosting, Energizing Treat: Blueberry Walnut Energy Bars

Who doesn’t love a brain boost? These days, my brain is on perpetual overload. Happily, there are deletable power-ups to be shared! These easy-to-make blueberry beauties give your body a lift and your sweet tooth a little natural satisfaction with whole body and brain benefits.  No need to purchase pre-packaged energy bars, often filled with sugar and preservatives. Superb, energizing snacks are easy to make and pack to taste with nutritious ingredients that nurture both body and mind.

What are the brain-boosting goods?

Blueberries
High concentrations of antioxidants have long propelled blueberries into being considered among the superdoods. Studies have shown blueberry consumption to be associated with a significant increase in brain activity, blood flow, and even memory. Flavanoids in blueberries are further seen as having potential to help lower risk of dementia, reduce effects of Alzherimer’s, and more.

Walnuts
Nuts are powerhouses in general, but walnuts shine as a top nut for supporting brain function. Walnuts are rich in Omega-3 fatty acids, shown to help improve focus and memory—thisincludes DHA, a type of Omega-3 fatty acid that may help boost brain performance. Additionally, walnuts and other nuts are packed with polyphenols and antioxidants, helping combat oxidative stress.

Bacopa
Also known as “Brahmi” after the god Brahma, beloved Bacopa has been featured in Ayurvedic medicinal practices for centuries. Used to support cognitive function and memory, the herb is featured as an ingredient in numerous traditional Indian herbal tonics and formulas.  Traditionally viewed as having intellect-supporting properties, Bacopa is known as a “nootropic”, meaning it studies suggest it may support healthy brain and nervous system function. Bacopa isn’t one of the more commonly known supplements—if you don’t have any, these bars will still taste great and offer a delectable boost. But if you are curious, they’re well worth a try!

Making these bars

Making these tasty bars is quick, simple, and versatile. Just a quick blend of clean, wholesome ingredients, an easy press into a pan, and a light bake is all it takes. We like to throw fresh blueberries, bursting with protective antioxidants, into the mix with high-fiber Medjool dates, super complex carbohydrate oats, nutrient-rich tahini, and a sprinkling of our Ceylon Cinnamon to form the base. Once blended, stir in more fresh blueberries and Omega-3 strong chopped walnuts for added flavor, nutrition, and texture. For a nut-free option, omit the walnuts or replace them with another addend of your choice, such as unsweetened shredded coconut or pumpkin seeds. Feel free to play with the flavors, too: swap fresh blueberries for dried or switch to cranberries or dried apple pieces instead.

Enjoy these bars plain, cooled and cut with no topping. Our family favorite includes drizzleing a little melted dark chocolate on top. Not only does the added touch of decadence taste delectable, but the melted dark chocolate also contains flavonoids and other compounds associated with protective brain benefits themselves. And, as testament to just how kid-approved these are, I’m sharing 11-year old Chef F’s reaction after tasting: “The brownies with blueberries are so yummy! Can I have another?”

While I referred to my boy as Chef F there, he didn’t have a hand in making the bars that day. I can’t tell you how sweetly touching it was that he described them as “brownies with blueberries”. Blueberry walnut brain-boosting energy bars

These easy-to-make blueberry beauties give your body a lift and your sweet tooth a little natural satisfaction with whole body benefits.

Ingredients

  • ½ Cup tahini (runny is best)
  • 1 Cup Medjool dates (10-12), pitted and soaked in warm water until plump
  • ½ Cup oats
  • 1 Teaspoon ORGANIC INDIA Ceylon Cinnamon
  • 1 Teaspoon ORGANIC INDIA Bacopa
  • ½ Teaspoon vanilla
  • ⅔ Cup blueberries, divided
  • 1 Tablespoon ground flaxmeal
  • ⅓ Cup chopped walnuts
  • ½ Cup dark chocolate chips, melted, for topping

Instructions

  1. Preheat the oven to 350 F. Prepare an 8-inch square baking pan with a layer of parchment paper.
  2. In a blender, combine the tahini, dates, oats, ORGANIC INDIA Ceylon Cinnamon, Organic India Bacopa, vanilla extract, and ⅓ cup of the blueberries. Process until these are blended into a sticky, soft, but pressable mixture. If needed, add a little water and blend again.
  3. Transfer the mixture to a bowl and stir in the remaining ⅓ Cup of blueberries and the walnuts. Press evenly into the prepared pan and bake for 20 minutes.
  4. Allow the pan to cool 5 minutes or more before cutting into 12 bars or 16 squares. Drizzle with dark chocolate and let fully cool until the chocolate is hardened. Enjoy!
