Mini Heart Shaped Strawberry Galettes
Easy, wholesome, and bursting with pure berryliscioueness, these adorably luscious mini galettes are sure to delight!
Who needs excess sugar when there’s so much joy to inspire simply with shapes? Sometimes considered a “lazy pie”, rustic, deliciously forgiving galettes open up opportunities for fun, creative variations on your favorite pies and tarts. No need for precise shaping, crimping, or special pans—galettes invite celebration of the charmingly imperfect.
This simple strawberry galette takes a little prep, but it can be spread out to suit your schedule; and, once you’re ready to get on with it, the process is pretty quick. Here I used this oil-free pie crust from A Virtual Vegan, which is not only comprised of just 4 basic ingredients that are easy to pull together into a dough, but it’s also awfully amenable to shaping according to whim. It is not what one would consider a buttery flake kind of crust, however, so feel free to use your favorite. When it comes to the filling, by all means use it as a guide.Go for mixed berries versus strawberries alone, or add extra sweetener. The filling quantities are likely to leave you with extra—this is a good thing! Simmer the leftovers in a saucepan and let them reduce to a sauce that you can spoon on top of the finished pastries. You won’t regret it!
These sweet delights are actually minimally sweetened, letting the pure natural flavor of the berries shine. That said, that natural flavor looooves pairing up with a little creamy decadence, and the clean simplicity means you can go ahead and add that dollop of ice cream or coconut whip without overly saccarhine results. Heart-Shaped Mini Strawberry Galettes

Easy, wholesome, and bursting with pure berryliscioueness, these adorably liscious mini galettes are sure to delight!
Ingredients
- ¼ Cup maple syrup
- 1 Teaspoon fresh lemon juice
- Pinch salt
- 2 Tablespoon arrowroot powder or cornstarch
- 2 1/2 to 3 Cups fresh strawberries, stemmed and sliced
- 1 prepared pie crust dough, chilled (such as this healthy, oil-free pie crust from A Virtual Vegan)
- Unsweetened dairy-free milk for brushing and coarse unrefined sugar for sprinkling, optional
Instructions
- Prepare the filling: In a bowl, whisk the maple syrup, lemon juice, pinch salt, and arrowroot flour or cornstarch. Add the berries and stir to coat. If desired, use a fork or potato masher to slightly mash for a jammier consistency while retaining full slices.
- Line a baking sheet with parchment paper or silpat. Working on one mini galette at a time, roll your dough and cut out a roughly 6-inch circle. Add approximately 1/4 cup of filling to the center of the curcle, and fold up the edges towards the center to create a "crust', pinching into a heart shape. Continue until all the dough is used--depending on your pie crust recipe, you could have 5-7 mini tarts. Place the tray in the refrigerator for 20 minutes to help preserve the shapes when baking.
- While the tarts are chilling, preheat the oven to 400F. Before baking, brush the crust edges with the milk and sprinkle with sugar if desired. Bake 20 minutes or until the crust is golden. Let the galettes rest a few minutes before serving. Serve warm as is or topped with ice cream, coconut whip, additional strawberry sauce (*see note), or a garnish of fresh mint.
Notes
You may have extra filling mixture--I usually do! If this is the case, simmer over low heat to reduce to a sauce. You can save this for to enjoy over pancakes, ice cream, or yogurt, or set aside and use to add jammy lusciousness to the top of the finished tarts!
