Easy vegan drop biscuits
Isn't it fun how so often what makes a food all the more lovable are the perfectly wonderful imperfections? Just like people. Little spots on orchard apples that emphasize their freshness and uniqueness. Or the knobbly bumps and wobbly plumpness of these easy, rustic, delicious drop biscuits! I love how simple these are, and very fail-safe--crisp on the outside, tender on the inside, these toothsome bites are made with Good Karma unsweetened plant milk and just a handful of other pantry staples.
I’ve been appreciating the perfectly imerfect a lot lately, because you know what else fits the description? Outside of ourselves, which is really the most meaningful parallel, that is. The holidays. As we kick off the season with Giving Thanks, I can’t help but reflect on how stressful, draining, and frantic this most wonderful time can be. More poignantly, how much loss can resonate, or loneliness feel magnified. These contrasts may not be holly jolly to note, but somehow they are kindling a really warm, genuine holiday spirit this year, by stirring a true balance of gratitude and compassion that’s propelling me through “stuff”.
Isn’t compassion magnificently transformative? It amazes me how we can lean into it and thereby bestow it on ourselves by grace of using it to transcend ourselves. Recently, I spent too much time building tension over a necessary social experience—something I’ve overly wired myself to do, e.g. guarantee a reality will bring relief by being better than the awful expectations I set for myself. As part of the leadup, I decided I was really, really tired of that habit, and experimented instead with relying on mantras to shake off the negative thoughts. Specifically, I kept coached myself to “relax”, “be my authentic self”, and “be graciously compassionate”.
Really, we can’t go wrong with this caring triad, can we? How authentic can an experience be if we don’t bring our authentic selves to the table, after all? But that compassion piece. It was what let the relaxation happen. It cleared out the headspace. It helped me sit peacably in my own awkwardnes, enough to see and accept that of others. And it was wonderful.
Enough of all that, though. It’s just biscuits. Unapologetic, quick and simple, Thanksgiving table and anytime biscuits. Not the star of the show, but a loving accompaniment. Happy holiday season, friends. xo
Easy vegan drop biscuits
Yield: approximately 10 biscuits
2 Cups white whole wheat or whole wheat pastry flour
2 Teaspoons baking powder
½ Teaspoon baking soda
½ Teaspoon salt
2 Tablespoons fresh herbs, chopped (optional)
1 Cup Good Karma Original or Unsweetened Plant Milk
½ Cup olive oil
1 Tablespoon lemon juice
Preheat oven to 400 F. Line a baking sheet with silpat or parchment paper.
Whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, whisk Good Karma plant milk with olive oil and lemon juice. Stir into flour mixture until incorporated.
Scoop approximately ⅓ Cup of batter per biscuit on the prepared baking sheet, leaving 1-2 inches in between each. Bake approximately 15 minutes, until the tops are crisp and golden.
